The best breakfast sandwich in the world

Bacon is bad for you! The thing is bacon just told me that it couldn’t give a flying f**k because it knows how good it tastes. Damn you bacon you’re like the bad boy girls know they should stay away from but they just can’t resist. Every time I tell bacon our relationship is over it just laughs because it knows I’ll be back, it’s just so crispy and salty and awesome, plus (PLUS!) with it you can make things like this….


Before we go any further I do have to stress I DO NOT eat this kind of thing every weekend, I thought this would of been pretty obvious until a friend saw these pictures and said to me, “Babe! Do you eat like that every weekend, with the two potato cakes and everything!” That’s like seeing me eating a Big Mac on a random weekend and asking if I eat like that all the time and asking why am I eating both the burgers in the bun?! This is a once in a blue moon kinda breakfast, like a twice a year kinda thing as lets be honest its not the healthiest, but baby it tastes good, get it? Course you do! Okayyyyyy let’s go!

I made this the other morning when I knew bacon and eggs just wouldn’t cut it. I wanted more, I needed more, something inside me was telling me I hadn’t reached my weekend bacon breakfast potential yet so this is the result of what happened. It’s a mixture of my favourite things, cheesy guacamole, bacon and instead of having meat (we already have the bacon people) I chose to make  potato cakes instead.


  • x2 Bread buns/rolls/baps (whatever you wanna call them)
  • Ketchup/mayonaise/hot sauce
  • x1 packet of streaky bacon ( 4 strips for each burger)
  • x1 egg (to fry, or you can poach if you prefer)

For the potato cake….

  • x2 large potatos (this will make 4 potato cakes)
  • knob of butter
  • x1 egg
  • dash of Paprika
  • x1 sprig of Parsley finely chopped
  • juice of 1/2 lemon
  • x1  white onion
  • salt and pepper to season

For the cheesy guacamole…

  • x2 avocado’s
  • x1 clove of garlic finely chopped
  • 1/2 red onion finely chopped
  • x1 red tomato finely chopped
  • juice of 1/2 lemon
  • 1/2 teaspoonful of chilli flakes (optional)
  • x1 tablespoonful of finely chopped Parsley
  • handful of grated cheddar cheese
  • salt and pepper to season




So first things first lets start with the guacamole. It’s pretty simple to make just mash your two avocado’s together, not so it’s perfect it can still be abit clumpy, it tastes better that way in my opinion. Then add the rest of your ingredients, half a chopped red onion, a chopped tomato, the chopped parsley, one clove of garlic, chilli flakes, the cheddar cheese, juice of half a lemon salt and pepper to season, mix this all together then set this aside.


Mash it up, mash it up!!


Pile high in a bowl thats clearly too small for it all to fit in and just stare at it and then maybe eat abit, just abit.

Next for the potato cakes. Now this particular potato cake recipe was inspired from the fabulous baker brothers recipe.  They made one just like this but there’s had black pudding in which I ‘m not a fan of but if you are you can add it if you like.


First grate your two large potatoes into a clean teatowel and then squeeze it all together in the towel to make sure you drain away all the access liquid from the potatoes, do this untill their completely dry.


Then move the grated potato into a bowl and add the paprika salt and pepper to season, one egg, lemon juice and the chopped parsley.


Fry your onions with a knob of butter in a frying pan remove then add this to the grated potato and the rest of the ingredients in the bowl and mix them all together.


Next make sure your frying pan is extra hot then add your two patties to the pan each one should be about 2cm thick. Fry for 4 or 5 minutes on each side until it’s golden and crispy and cooked in the middle.




Now I don’t know about you but for me it’s streaky bacon all the way! I used to hate streaky bacon I was all, “but its got fat running all the way through it ewww!” but then I realised if you fry it so it’s extra crispy all over  it’s pretty much heaven and a heart attack all rolled into one straight out of a frying pan!

Next add it all together!!!


Just so we’re straight, on the bread bun for the sauce I mixed together tomato ketchup, mayonaise and hot sauce. Then I added one potato cake then two strips of bacon, then a thick layer of the cheesy guacamole, then the second potato cake then the last two strips of bacon and on top of that a fried egg.


Ta daaaaaaa!


If I ate like this every day I’d be kinda screwed.


It’s happening!! Potatooooo I see you! Bacon I love you! Oooh cheesy guacamole you understand me, I feel like I’ve known you all my life! I…..ooooooooh Bacon nobody does it like you.



Just like when its over with a bad boy, it’s the same story, you feel alittle dirty and ashamed afterwards, it’s a head in hands moment. It tasted sooooooooo good but you knew it was wrong. Your bikini’s are shaking their heads with disapproval as they lay in your chest of drawers saying, “don’t come cryin to me when you hit the beach and you’re not happy with what you see, you have ZERO willpower, child you better recognise!” I quickly reach for my ipod and switch on Beyonce to make me feel strong again as I rock back and forth, “to the left, to the left everything you own in a box to the left!!!” Bacon this is the LAST time.

My next recipe post will be lettuce and air just to balance things out.
