Lobster Mac & Cheese

Right well, what can I say about this other than you need this recipe in your life, trust me you do.

Two things before we go any further… 1) My photography skills are clearly still not the best but hey I’m over it and I’m sure you are too. 2) This recipe isn’t the healthiest, I’m over that too and no I don’t eat like this everyday, think of this as a special treat dish. To be honest I hate that I even have to write that it’s just there will always be certain individuals who will comment on how I need to post more healthy dishes and ask, is this how I always eat? My theory is you all know how to make a salad, roast a chicken or cook a piece of salmon right? Course you do! Plus what would life be without cheese and pasta and lobster and cream!! Ok moving on! :)


Now at first I was just going to add lobster to a standard mac & cheese simples… That was until I saw THIS RECIPE. This woman takes Lobster mac & cheese to a completely different level, just have a read of her bio she’s cooked for JFK junior for christ sake! After I saw her blog post normal lobster mac & cheese ( stirring lobster bits into a cheese sauce then mixing it in with your al dente macaroni) seemed like an embarrassment; I mean she calls it an abomination. This woman is clearly my mac and cheese spirit animal.
No, no, no I knew what I had to do and I was ready no matter how hard the task to face the consequences. This way was the only way.
Yes the recipe is alot more intimidating, yes it includes fancy cooking instructions such as, start by cooking our crustacean friends in a court-bouillon.” and yes you all couldn’t give a flying fuck about my little intro here you just wanna know how to make this so let’s just get on with it because oh baby it is worth it.

This recipe is my take on the scallops you can buy from Borough Market in London, pictured below. If you haven’t tried them yet you must because they’re incredible. As you can see they used three scallops compared to my one. I promise I’m not being stingy, I bought queen scallops which are much bigger than the ones you see below, I served my dish as a starter so it was just the right amount. This recipe also involves bacon (yep my love affair continues…) I think you can actually convert a non scallop lover with this recipe, the combination of stir fried vegetables and a shit load of bacon completely switches up the game. Oh and on top of all of that it’s super easy and super quick to make woop de woop!

Right well erm…shall we? I mean you don’t have to but it would be great if you did!



Sorry my blogging has been slacking lately my mac daddy and I are having serious issues, he’s just come back from the apple store today so that’s why I haven’t been in the blogging world of late but hopefully now I’m back and he isn’t going to give me any more trouble!

Ok, lets kick things off with a food post shall we. THIS is a death row type of meal. I mean yep, I get that I reside in the UK and I’m pretty sure I’ll never be on death row but for the purpose of this post lets just pretend my name is Shanikwa, I hail from the Bronx and I stabbed my boyfriend to death because he kept leaving the toilet seat up. ( problems :( )
So now here I am on death row reminiscing, wishing I’d invested in one of those toilet seats that automatically go down themselves instead of wiling out, maybe poor Darnell would still be here?! ( yep I went with Darnell, Tyrone seemed too obvious) Then my time comes….. I have to choose the LAST MEAL I’m ever going to eat before it’s all over, apparently you’re aloud to chose whatever you fancy.
Ok. so I can’t deny chicken or steak would be heavily in this meal choice but if I had to go with a fish dish this particular one would come pretty close!

I mean look it’s fish with bacon and there’s a creamy sauce whats not to love!


Oh and a random picture of me! My friend cannot focus a camera, seriously we tried it five times and this one was the best he could do, the rest of the pictures are better I promise!

In my book summer time means Jerk chicken time; ok so it means alot of other things too but Jerk chicken is obviously the most important. This weekend I travelled up north to my hometown in Lytham to spend the weekend with family and friends. My dad and my nephew were visiting friends in Italy so my mum, my sister, and my little niece Olivia and I took it upon ourselves to make this a girls weekend.



With the weather finally seeing sense we decided to light up the barbecue, drink lots of alcohol and fry ouselves under the sun like all good Brits should do!
